I Tried it and I Liked it: White Chocolate Coconut Pie...Sorta

I tried this pie recipe, with some tweaks, and took it to Thanksgiving dinner. The biggest tweak was that I used the organic chocolate bars that Ben picked up for me and then added in the cocoa butter. Also, I was puzzled at the amount of "crust". It was a lot. Like, a ton. I had to double the filling to fill it all. Weird. I'll half the crust  next time or quadruple the filling and make two pies. It was good. Since I used some "regular" chocolate it ended up not being too hard and crumbly. It was actually a touch melty after sitting out all day. I don't know if anyone else liked it, but I'll definitely be making it again..for myself! ;)
