Zucchini Noodle Lasagna

 

 

 

 

I was really missing lasagna so I went ahead and tried an idea I kept seeing around the web and Pinterest; substituting zucchini in place of noodles. I used my mandoline slicer, lengthwise, on the zucchini and used them exactly as I would have with any other lasagna. It turned out really well. The boys never even noticed! I'll for sure be trying that again!
