GAPS Diet: Bacon Cups
New and exciting GAPS recipes are a challenge for me. After a while, it all starts to look the same and nothing sounds exciting or appealing anymore.
But everything is better with bacon.
Enter, the bacon cup:
Heat oven to 350.
For each cup I cut a piece of bacon into thirds, layered them crisscoss, and then stuck them in the oven for 10 minutes.
Meanwhile, I scrambled some eggs together with a bit of goat milk and spices. You could also simply crack one egg into each bacon cup.
Pour scrambled eggs into bacon cups, sprinkle with some cheese, and bake for 20 minutes.
Easy. Peasy. Done. Good.

Yummy! I'll have to try this - might even get M to eat eggs this way!
